Bacon Ranch Pasta Salad

The weather is warming up and it won’t be long before summer is here in full force. As you may have guessed, bacon is often on our minds – warm, crispy goodness!  At this time of year though, especially, the thought of a salad is appealing. Delicious salads for workday lunches, picnics and other get-togethers. Our Bacon Ranch Pasta Salad does not disappoint.

Bacon Ranch Pasta Salad

1 (1 lb.) package Cloverdale Bacon

1 package ranch dressing mix

1 (8oz.) container sour cream

1 cup milk

1 pint small tomatoes, cut in half

1 bunch green onions, sliced

1 box medium shell pasta

Cook pasta according to directions on box. Drain and cool. Set aside. Bake sliced bacon in oven for 15-20 minutes at 350 degrees (or until desired crispness is reached). In the meantime, prepare ranch dressing according to directions on package. Add ranch dressing to pasta in a large bowl. Stir well and add in green onion and tomato. Salt and pepper to taste. Finish off by crumbling or slicing bacon. Add to pasta mixture. Refrigerate for at least 1 hour before serving.

Make it super creamy: Prepare an additional dressing mixture of ranch mix, sour cream and milk. Add as needed to pasta mixture before serving.
