Cloverdale Bacon Roasted Brussels Sprouts


12 slices Cloverdale Bacon (any variety, we used Applewood Smoked but any flavor would be fantastic)

2 pounds brussels sprouts (remove stem and cut in half if large)

3 cloves garlic, minced

¼ teaspoon salt

¼ teaspoon cracked black pepper

Juice of ½ lemon

½ cup grated Parmesan cheese



Preheat oven to 400 degrees.

Line two jelly roll pans with foil.  Separate bacon into strips and place on baking pan.  Place pan in the oven and bake 15-20 minutes, or until golden brown and crispy (exact cooking time depends on oven, our bacon took about 12 minutes).  Remove bacon from baking pan and place on paper-towel lined plate.  Set aside to cool.  Once cool to the touch, break bacon into small pieces.

Place brussels sprouts in a large bowl.  Drizzle with 3 tablespoons of bacon grease.  Toss to combine with garlic, salt and pepper.  Spoon brussels sprouts on baking pan.  Place in oven and roast for 20-30 minutes (depending on the size of your brussels sprouts) or until edges have browned and sprouts are just softened.  Remove from oven and toss to combine with crumbled bacon and cheese.  Spoon brussels sprouts onto serving platter or bowl.

Recipe serves 8 and can be prepared in about one hour.
