Kale and Apple Salad with Candied Bacon

Ingredients

1 lb. of your favorite Cloverdale Bacon (We used Pepper for a bigger flavor)

1 Cup of Brown Sugar

1/4 tsp Cayenne Pepper

6 cups of your favorite Kale

3/4 cup or more of Feta cheese, diced

3/4 cup or more of Walnuts

1 Apple, chopped

 

Vinaigrette:

3/4 cup Oil

1/4 cup Apple Cider Vinegar

2 TBLS Sugar

2 tsp Salt

1 tsp Onion Powder

Fresh Cracked Pepper to taste.

Directions

Cut Cloverdale Bacon into 1 inch pieces. Add Brown Sugar and Cayenne Pepper and toss. Bake at 350 until they are caramel in color. Let cool.

In a large bowl, add Kale, Feta, Walnuts, and Apple.

Whisk together the Oil, Apple Cider Vinegar, Sugar, Salt, Onion Powder. Pour over salad.

Toss and serve immediately. Fresh Cracked Pepper to taste.
